Description

Beef stew is a hearty and nutritious dish that can be enjoyed at supper after a long day. The beef stew recipe below is easy to follow and results in a delicious and filling meal. This recipe is an easy freezer beef stew meal.


Ingredients

-1 lb beef stew meat

-1 onion, diced

-3 carrots, peeled and diced

-2 celery stalks, diced

-1 lb potatoes, peeled and diced

-1/2 cup flour

-2 tablespoons tomato paste

-3 cups beef broth

-1 cup red wine

-1 teaspoon dried thyme

* salt and pepper to taste


Instructions

1. In a large pot or Dutch oven (on Amazon) over medium heat, brown the beef stew meat in batches until all sides are browned. Add the onions, carrots, celery and potatoes to the pot.

2. In a small bowl or glass, whisk together the flour and tomato paste until smooth then pour into the pot with the beef mixture. Stir until well combined then add the beef broth and red wine. Season with thyme, salt and pepper then bring to a boil.

3. Reduce heat to low then cover and simmer for 2 hours or until the beef is tender when pierced with a fork.*

4. Serve with bread or crackers.

Notes

*If you want to thicken the beef stew, add flour and mix it well in a glass of water until it gets lumps free. If you don’t want the undercooked, starchy taste and rough consistency, heat the thickened liquid on a stove and follow the specified cooking time in the recipe.
