Instructions

  • Step 1 – Start by boiling the chopped potatoes in a large pot of salted water until they are fork-tender, about 15-20 minutes.
  • Step 2 – While the potatoes are cooking, season the chicken breasts with salt and pepper to taste.
  • Step 3 – Heat a skillet over medium heat and add a little oil. Cook the chicken breasts for about 6-7 minutes on each side or until they are fully cooked through and no longer pink in the center.
  • Step 4 – Remove from heat and let them rest for a few minutes before slicing.
  • Step 5 – Once the potatoes are cooked, drain them and return them to the pot. Add the butter and milk to the pot, then use a potato masher (on Amazon) or fork to mash the potatoes until smooth and creamy.
