Jerk Chicken

Jerk Chicken in garlic cloves, peeled.


  • 6 chicken-thighs

Jerk Marinade

  • ¼ cup olive oil
  • 2 handfuls fresh thyme, destemmed
  • 3 bay leaves, the leaves removed from the stalk
  • 1 whole bunch (~5 pieces) spring onions, chopped
  • 1 1-inch-thick piece fresh ginger, peeled and roughly chopped
  • 6 garlic cloves, peeled
  • 2 scotch bonnet (habanero) peppers, deseeded
  • 1 tablespoon whole allspice berries (alternatively, you can use 1 tablespoon ground allspice)
  • 1 tablespoon whole black peppercorns (alternatively, you can use 1 tablespoon ground black pepper
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • ¼ cup coconut sugar
  • 1 tablespoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon


Stage 1 – Marinating Your Jerk Chicken

  1. First, if you are using whole spice ingredients like allspice berries and black peppercorns, place all whole ingredients into a mortar and pestle and grind into small pieces. You don’t need to grind them down into a powder, but at least to start breaking them up a bit before blending
  2. Next, place all your jerk ingredients into a blender and blend thoroughly. You should get a highly fragrant, brownish-paste that is the marinade for your jerk chicken
  3. Into a bowl, pour part of your marinade in and rub well into each piece of chicken thigh. Be sure to keep some of the marinade off to the side, since it will double as a delicious sauce for your jerk chicken once it’s done!
  4. Place your jerk chicken into the fridge for at least 1 hour, although preferably overnight. The more time the marinade has to work, the better

Stage 2 – Cooking Your Jerk Chicken

  1. Begin by heating your grill and creating an environment of roughly ~300-350 degrees Fahrenheit inside the chamber but not much more than this
  2. Before placing on the grill, lightly brush your jerk chicken with some extra olive oil, then place on the grill
  3. Grill for 6 minutes on one side, then flip. Once you’ve flipped, brush the side that’s just cooked with an extra bit of some leftover marinade (it’ll cook once more)
  4. After 6 minutes, flip again and reapply some extra marinade to the side just grilled
  5. Repeat this cycle once more, for another 12 minutes (grilling for 24 minutes total), before taking your jerk chicken off the grill. Double check to make sure it is fully cooked, which it should be by now. And enjoy!
