- 2 tablespoons sour cream
- 1 tablespoon butter or olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup grated Parmesan cheese
- Optional: 1/2 teaspoon onion powder
- Optional: 1/2 teaspoon garlic powder
- Optional: 2 tablespoons chopped fresh herbs (such as parsley or chives)
Instructions
- Step 1 – In a large pot, bring water to a boil. Add frozen cauliflower and boil for 8-10 minutes or until fork-tender. Drain well.
- Step 2 – In a large skillet or saucepan, melt the butter or heat the olive oil over medium heat.
- Step 3 – In a large bowl, combine the cooked cauliflower, cream cheese, sour cream, and butter or olive oil.
- Step 4 – Season the mashed cauliflower with salt, pepper, and if using, onion powder, garlic powder. Stir well to combine.
- Step 5 – Mash the mixture using a potato masher (on Amazon) or an immersion blender until smooth. If desired, sprinkle grated Parmesan cheese and chopped fresh herbs over the mashed cauliflower before serving.
- Step 6 – Taste and adjust seasoning if necessary. Serve hot as a delicious side dish.
