  • 1 cup of polenta
  • 3 cups of water
  • 1 cup of vegetable broth
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil

Instructions

  • Step 1 – Start by cooking the polenta in a heavy-bottomed saucepan. Combine the water, vegetable broth, and salt and bring it to a boil.
  • Step 2 – Add the polenta to the boiling liquid, stirring continuously to prevent lumps from forming. Reduce the heat to low and simmer for about 30 minutes until the polenta becomes thick and smooth.
  • Step 3 – Pour the cooked polenta into a baking pan, spreading it evenly. Allow it to cool and set for at least 1 hour.
  • Step 4 – Once the polenta has cooled and set, cut it into slices of your desired thickness. Brush each slice with olive oil to prevent sticking and enhance the grilled flavor.
  • Step 5 – Preheat your grill pan over medium-high heat. Once hot, carefully place the sliced polenta onto the grill pan.
  • Step 6 – Grill the polenta slices for about 3-4 minutes on each side or until grill marks appear and they are heated through.
  • Step 7 – Remove the grilled polenta slices from the grill and serve them hot as a delicious appetizer or as a main course alongside your favorite vegan dishes.
