Monkfish Tacos

Ingredients

  • 1 lb fresh monkfish fillet
  • 1 tbsp olive oil
  • 1/4 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 8 tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced red onion
  • 1 avocado, diced
  • 1 cup diced tomatoes
  • 1 lime, cut into wedges

Instructions

  • Rinse the monkfish fillet and pat it dry with a paper towel. Cut it into small, bite-sized pieces.
  • Add olive oil, salt, black pepper, chili powder, paprika, cumin, and garlic powder in a shallow bowl. Mix them well. 
  • Add the monkfish fillets to the bowl. Ensure that they are fully coated.
  • Preheat your oven to 400°F (204°C)
  • Put the coated monkfish pieces on a baking sheet. Bake for 10-12 minutes. 
  • Warm up the tortillas on a griddle over medium-high heat.
  • Assemble the tacos by adding the shredded lettuce, diced tomatoes, diced red onion, and diced avocado to each tortilla.
  • Add the cooked monkfish pieces to the veggies and garnish with a lime wedge.
