- 1 lb fresh monkfish fillet
- 1 tbsp olive oil
- 1/4 tsp black pepper
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- 8 tortillas
- 1 cup shredded lettuce
- 1/2 cup diced red onion
- 1 avocado, diced
- 1 cup diced tomatoes
- 1 lime, cut into wedges
Instructions
- Rinse the monkfish fillet and pat it dry with a paper towel. Cut it into small, bite-sized pieces.
- Add olive oil, salt, black pepper, chili powder, paprika, cumin, and garlic powder in a shallow bowl. Mix them well.
- Add the monkfish fillets to the bowl. Ensure that they are fully coated.
- Preheat your oven to 400°F (204°C)
- Put the coated monkfish pieces on a baking sheet. Bake for 10-12 minutes.
- Warm up the tortillas on a griddle over medium-high heat.
- Assemble the tacos by adding the shredded lettuce, diced tomatoes, diced red onion, and diced avocado to each tortilla.
- Add the cooked monkfish pieces to the veggies and garnish with a lime wedge.
