Description

Ingredients

Crepe Batter

  • 4 eggs, beaten
  • 1 cup of milk (the more fat content, the better)
  • ½ cup club soda
  • ½ cup pastry flour
  • ½ cup buckwheat flour
  • ½ teaspoon salt
  • 3 tablespoons butter

Filling

  • 2 cups cottage cheese
  • 2 egg yolks
  • 2 tablespoons heavy whipping cream
  • 3 stalks of green onions, sliced
  • 1 tablespoon dill
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground cayenne

Instructions

Stage 1 – Create the Nalysnyky Filling

  1. In a bowl, combine your cottage cheese and egg yolk and mix well together. The cottage cheese should become milkier and thicker as a result
  2. Next, add your whipping cream and stir through as well
  3. Add your dill, cayenne and spring onions and mix together well, then set aside

Stage 2 – Create Nalysnyky Batter

  1. Start by beating your eggs into a large mixing bowl until they are well-beaten
  2. Next, add your milk and club soda into the eggs and mix well
  3. Mix your pastry flour and buckwheat flour together and sift over your mixing bowl with the egg mixture. Add the flour bit by bit, stirring occasionally to incorporate everything in before adding more flour. By the end, all your flour will be added and you’ll have a batter with a farily runny consistency

Stage 3 – Making Nalysnyky

  1. Take wide-bottomed pan over medium-high heat. Once heated, add a small bit of your butter and let it melt. With the help of a paper towel, spread the butter around the entire surface area of the pan
  2. Once nice and hot, take a soup ladle and fill it up halfway with your nalysnyky batter
  3. Tilt your pan to one side and pour the batter at the top. As the batter pours and falls down the pan, rotate your pan in order to let the rest of the batter spread very thinly and evenly around
  4. Cook for 1 minute, then flip and cook for another minute on the other side. At around the 2 minute mark, your nalysnyky should be cooked and can be taken out of the pan
  5. Repeat and create as many crepes as the batter will allow

Stage 4 – Add Filling and Bake Nalysnyky

  1. Preheat your oven to 350 degrees Fahrenheit and prepare a baking dish greased with olive oil
  2. Spread one of your nalysnyky on a flat surface (either a plate or a cutting board) and, with a flat-sided spatula, spread 1-2 spoonfuls of your filling around the entire surface area
  3. Once the filling has been spread, roll up your nalysnyky into a long strip and place into your baking dish. Repeat for all the nalysnyky you have
  4. Cover your baking dish with aluminum foil and place in the oven. Bake your nalysnyky for 30 minutes
  5. After 30 minutes, remove and uncover your nalysnyky and let cool. Before serving, cut each roll into 3 equally sized pieces, then serve and enjoy!
