- 1 lb monkfish fillets
- 1 cup all-purpose flour
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp salt
- 1/2 tbsp black pepper
- 2 eggs
- 1 cup panko breadcrumbs
- Vegetable oil
- Lemon wedges for serving
Instructions
- Prepare bowls for dredging: Thoroughly mix flour, paprika, garlic powder, black pepper, and salt in bowl #1. Beat eggs until well-combined in bowl #2. Place breadcrumbs in bowl #3.
- Cut the monkfish fillets into uniform, bite-sized pieces.
- Dip each bite-size piece of monkfish into the flour mixture. Make sure it is well coated. Dip it into the beaten eggs. Finally, dip it into the panko breadcrumbs.
- Pour the vegetable oil into a large skillet (on Amazon). Heat the oil to 180° C. Add the coated monkfish bites to the skillet in batches. Cook for about three to four minutes per side. They should turn golden brown and crispy.
- Once the monkfish are brown and crispy, remove them from the skillet. Put them on a plate with a paper towel to eliminate any excess oil.
- Serve the monkfish bites immediately with lemon wedges on the side.
